ROASTED BABY CHICKEN

 

Suitable for: Gluten free

Prep: 25mins, Cooks In: 1hr 25 mins

Serves: 4-6  people

Ingredients:

2 baby chickens

250g yoghurt

1½ tsp salt to taste

1 heaped tsp cumin powder

1 heaped tsp coriander powder 

8 to 10 green chillies depending on heat

3 garlic cloves

1 inch ginger

Juice of 1 lemon 

Oil for drizzling

Orange food colouring

Method:

  1. Blend chillies, garlic and ginger

  2. Transfer the mixture into a bowl and mix in all the spices including yogurt

  3. Once mixed add food colouring and lemon juice

  4. Rub into the chicken and leave to marinade in the fridge for 4 to 6 hours 

  5. An hour before cooking remove the chicken from the fridge and place it onto the worktop to bring it to room temperature

  6. Preheat oven at 200°C/400°F/gas 6

  7. Put the chicken into a deep oven tray covering with aluminium foil and place in the oven

  8. After one hour check if chicken is soft and tender and the meat just pulls of the bone. If cooked, place the chicken back into the oven to make it golden brown for about 25 minutes, do not cover

  9. Serve with roast potatoes, carrots and vegetables of your choice
