CHICKEN KEBAB

The alternative to red meat kebabs and to be honest I prefer chicken kebabs as it is softer and tastier.  Perhaps, I am a little prejudiced as I prefer white meat.  I cut the chicken breast in cubes and make my own mince however you can ask your butcher to make the mince for you. Chicken mince is so soft that the kebabs just melt in your mouth.  It is best if all the ingredients are combined and left to marinade overnight, however it can be prepared during the day and left for couple of hours in the fridge. These chicken kebabs have been cooked on the BBQ however, there is no reason why they cannot be baked in the oven or grilled.  Please note some of the ingredients I have put down are optional, if these are added we get that extra flavour however if you have not got the ingredients don’t worry just improvise. I can only say one thing that this is one of the easiest recipes and please have a go and make some delicious tasty kebabs.

Prep: 45 mins, Cooks In: 10 mins

Serves: 6-7people


Ingredients:

4 chicken breasts minced

10 to 15 green chillies depending on heat

2 onions

2 inches of ginger

4 garlic cloves

40g or a handful of coriander

2 to 3tsp salt or to taste

1 heaped tsp coriander powder

1 heaped tsp cumin powder

½ tsp chili powder - optional

1 tsp black pepper crushed 

1 tsp coriander seeds crushed - optional

Small bowl with water or oil


Method:

  1. Mince chicken breasts 

  2. Blend onions, green chilies, ginger, garlic and mix with mince in a bowl

  3. Add all the dry ingredients to the mix including the spices

  4. Chop coriander and add this to the mince 

  5. Leave overnight or for at least 2 hours in the fridge  

  6. Only remove the mixture from the fridge when you are ready to make the kebabs ensuring the mixture is firm, as warm mince will not attach to the skewers

  7. Wet hand with water or oil from bowl, then take a ball of mince enough that you can handle in your hand and hold the skewer in the other and attach by squeezing the ball onto the skewer.

  8. Pinch both ends of the meat and gently and quickly make into kebab shape

  9. Once all the mince is onto the skewers take them and put them on the BBQ

  10. Keep turning the kebabs every couple of minutes until golden brown 

  11. Remove and serve with naan bread, salad, mayonnaise and/or green chutney
