BUTTER CHICKEN COOKED IN SLOW COOKER

Chicken breast cut into cubes and cooked in a sauce using the slow cooker.  The sauce is rich containing coconut cream which adds a lovely texture.  The rich, creamy spiced sauce just makes the whole dish melt in your mouth.  The thing about this way of cooking is basically all the ingredients are added to the chicken in the slow cooker.  Switch it on and forget about it for a few hours obviously I suggest you do go and stir it just to make sure everything is being cooked evenly

Prep: 20 mins, Cooks In: 3 to 4 hours 

Serves: 4-6 people

Ingredients:

1 finely chopped onion
100g tomato puree (half tube)
1 tin coconut milk (400ml)

Coconut cream 200g (Optional)
4 crushed garlics
1 tsp cumin powder
1 tsp coriander powder
1 tsp chilli powder
1 tsp crushed peppercorns or to taste
1 tsp salt or to taste
4 heaped tbsp natural yoghurt
125g salted butter
2 large chicken breasts cut into cubes
Fresh coriander or mint leaves for garnish

Method:

  1. Set slow cooker to High

  2. Add coconut milk, coconut cream and yoghurt to the slow cooker  

  3. Add all the spices and mix

  4. Add onions, butter and chicken

  5. Place lid on the slow cooker and cook for 4 hours mixing occasionally 

  6. Garnish with coriander and serve with steamed basmati rice
